Braised chicken thighs This Mediterranean dish consists of braised chicken thighs, onion, garlic, fresh lemon, capers, and Spanish olives and topped is topped with Himilayan salt and fresh ground black pepper. This lady ... is my beautiful friend Cristal ❤️... she truly has a heart of gold 💛and a passion for ministering to many. A few years ago Cristal was in pain daily, caught colds 🤧and sinus infections continuously and dealt with some MISerable 🥴IBS issues on a regular basis. Spaghetti Squash Lasagna Casserole Ingredients: 4 lb spaghetti squash - you will only need 4 cups (8 Greens) 8 oz part skim ricotta (1 Lean) 8 oz reduced fat mozzarella cheese, divided (2 Leans) 2 tbsp egg beaters 2 tbsp grated parmesan cheese (2 Condiments) 2 cups Italian diced tomatoes with less than 5 g of carbs per 1/2 cup, divided (4 Greens) 1/4 tsp garlic powder (1/2 Condiment) 1/8 tsp salt (1/2 Condiment) 1/8 tsp pepper (1/4 Condiment) 2 tsp olive oil (1 Healthy Fat) 5 oz Jennie O Italian seasoned ground turkey 93%, cooked or make your own seasoned meat (1 Lean) Directions: Preheat oven to 400 degrees. Prick squash with fork or metal skewer and roast in oven for an hour or until it seems soft when you press on it. Take it out and leave on the counter until cool. When squash is cool, cut in half and scoop out the seeds and discard. Use a fork or spoon to scoop out the rest of the squash and set aside in a bowl. Measure out 4 cups of spaghetti squash and store the rest in the fridge. Add oil to a skillet over medium heat. Saute the 4 cups of squash for a few minutes until it begins to brown. Add garlic powder, salt and pepper, if desired. Mix ricotta cheese, parmesan, egg beaters and 4 oz or 1 cup of mozzarella cheese together. Preheat oven to 375 degrees. Pour 1 cup of the diced tomatoes on the bottom of a 9 inch or 8 inch square casserole dish and spread evenly. Add squash. Top the squash with the ricotta cheese mixture. Then top the ricotta cheese mixture with the cooked ground turkey. Spread 1 cup of diced tomatoes over the meat. Bake for 35 minutes. Spread the rest of the mozzarella cheese over the top (1 cup) and bake an additional 25 minutes until cheese is melted and lightly brown. It’s #nutritioncorner with Coach Tonya @mnmealprep Ready... set.... crockpot! To me, it's the BEST tool I have in my kitchen for prepping meals for myself and my family. Find a few of your favorite recipes, double it, and make one on Saturday and one on Sunday to set yourself up for the week. It requires minimal hands on time, just a few minutes to prep and you're done! These are a few of my go-to's for my family. Add a steamed veggie or your favorite salad to round out the meal. Slow Cooker Tuscan Chicken Stew INGREDIENTS 2 pounds boneless, skinless chicken thighs 4 large carrots 3 stalks celery 1 large onion 2 tablespoons extra virgin olive oil 1 tablespoon minced garlic sea salt, to taste ground black pepper, to taste 1 quart chicken broth diced tomato 2 tablespoons Italian seasoning 2 bunches kale 2 tablespoons balsamic vinegar 1. Slice carrots. Dice celery and onions. 2. Heat olive oil in a skillet over medium high heat. Add onion and garlic and sauté for a few minutes. 3. Season chicken with salt and pepper, then add to the skillet and brown on both sides. Remove chicken and set aside. 4. Add a little bit of chicken broth to the pan to scrape up the delicious browned bits, then pour the broth into your slow cooker. 5. Add celery, carrots, chicken, tomatoes, Italian seasoning, and remaining stock to the slow cooker. Cover and cook on low for 6 hours. 6. When ready to serve, chop the kale. 7. Stir in kale, balsamic vinegar, and more salt and pepper, as needed. Let sit for 5 minutes, until kale wilts. 8. Serve and enjoy! Check out our FB page for a second recipe - Sweet Potato Chili!!
